However you make them, fritattas are such a versatile food that it's worth getting beyond the fear! And I use a skillet in the ove...I've done that! And I use a skillet in the oven often, mostly for searing then finishing in the oven. As often as I've done it, I still do it now. It's sooo painful!<br /><br />When I was in Alaska recently, one of the chefs kept joking (sort of) that he couldn't feel anything in his hands anymore.
