In most houses, this wouldn’t be worthy of a title. In my house, it’s practically cause for a ticker-tape parade.
Let’s just say that we have diverse tastes, and some of us like fewer things than others. We all like spaghetti and meatballs and, well, I’m pretty sure there’s something else I’m forgetting.
But everybody in my family liked this salad!
It’s such a simple recipe that I’ve flipped past the page many times. It’s the perfect time of year to make it, as the corn couldn’t be any better. I bought all the ingredients at the local farmer’s market, and the freshness of the vegetables made it a real standout. As an accompaniment to barbecued chicken, served in the backyard, it was unbeatable.
Give it a try, and I’ll bet everybody in your family will like it too.
Fresh Corn Salad
5 ears corn, shucked
1/2 cup small-diced red onion
3 Tbsp cider vinegar
3 Tbsp good olive oil
1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
1/2 cup fresh basil leaves
In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the colour. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
In a small bowl, combine the cider vinegar and olive oil.
Toss the kernels in a large bowl with the red onions, vinegar and olive oil, salt and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve at room temperature or cold.

My mouth's watering just reading this. It's not quite the time of year for fresh corn here right now, but I'm going to try it anyway. Can't wait!
For everyone in a family to like one dish is pretty special! This sounds awesome!!
Mmm. I love corn. Definitely trying this one!
You salad look very simple but yet I love it. I am corn lover:)
I love salad as well! The corn makes this dish very tempting.
Fresh corn, red onions, and fresh basil...who wouldn't love that salad? :D
I have corn leftover from last nght's dinner; will try your salad for sure and need recipes for my basil.

This sounds like my kind of salad too. I love "throw together" salads with lots of veggies. I also love Ina Garten so I doubt you could go wrong!
Everyone in my house loves this salad as well!! Isn't it great when the corn is right off the cob at the height of corn season? Oh, yeah. And I always think it is so pretty and cheerful. We serve it a lot with grilled hamburgers and Ina's Watermelon and Feta Salad...just says "SUMMER!!" doesn't it? Fun to see it and read you post on it.
Makes me think of the times we would just go out to your corn field to pick corn for the evening meal. We have never had any fresher or better!
You can almost never go wrong with an Ina Garten recipe. I use a similar recipe that has cilantro in it. I can't believe you found a recipe that everyone in your household will eat...I'm still on the search!
Yum! I think everyone in my family would like that salad too!
This looks perfect to go with some grilled fish or meat, and I have some corn in the house. Maybe I should make this tomorrow! Thanks for the inspiration!
Boy do I understand how momentous it is when you find a food that everybody likes! Looks like a good one.
I think your salad looks so good! We had corn on the cob for dinner this evening and there were leftovers so I am able to make this :)
oh, I just love fresh corn salad! :) We had corn on the cob tonight, but I can't wait until it's piled up in our CSA box!
Mmmm! Sounds yummy! So any suggestions for kiddos who might be picky about the onion? Could I blend it in the blender? Or would that make the onion taste too strong?
Haha I think corn is the only veggie my family can agree to love! Sounds like a great salad.
We've been actioning corn salads like crazy over the past few months, so I think that this would probably be a hit :) I love how Ina is always sure to indicate that it should be "good" olive oil, etc.
WE've had lots of corn in our CSA! I will be giving this a try soon.
I think I've had something very much like this before and it was delicious! I had forgotten about it. Thanks for the reminder. Yours looks perfect.

That Barefoot Contessa sure is good at what she does. I have yet to make a recipe from her that I don't like.

We've got corn and basil growing in the backyard, so I can't wait to make a really fresh version of this fresh salad!! (Okay, so it could be another month or two before the corn is ready) Simple and delicious. I can't wait :)

Anything with corn is a winner in my house! We are all serious lovers. This salad looks wonderful - it lets the corn shine!
I can completely relate to your happiness that everyone liked this salad. With 7 different sets of taste buds in my house, it's almost a miracle when everyone likes something. That salad does sound mighty good, too.
That's wonderful! I am sure I will like this salad. In fact I am quite sure 3 out of 4 of us will love this salad. But one of us will be picking out the onions and the "green stuff". ;)
It does look good. If only I could get everyone in my family to like the same thing. There is nothing no-thing they all agree on.
Everybody plus me loves this salad. Especially during corn season - which is now!
I'm not much for corn, but this sounds pretty good, and fresh!
I just love the barefoot contessa, so I know I would love this salad too! Thank you for sharing this delicious side. I'm enjoying your pictures and your words with a cup of coffee in my hands and rolls rising on the counter. Hugs and love from Austin!

Oh, I LOVE sweet corn and it would be fantastic in this simple, flavorful salad. I'm copying to try :)
