You know me. I’m the
one who sits beside the fig jam at book club and glares at anyone who helps
themselves a little too enthusiastically.
Because really, it’s mine.
And hopefully, that fig jam is perched next to some blue
cheese (in a perfect scenario, it’s Saint Agur, but I’ll happily eat whatever you’re
serving). While the rest of you are
discussing the book, I’ll be eating for three.
So you can guess how I reacted when I saw this recipe for
blue cheese, fig and arugula mini-pizzas.
Yup, it makes a recipe out of things I normally just dip into, and it tosses in my beloved arugula. The beauty
of this recipe isn’t that it’s so easy, or that it’s so good: it’s that now I
can make it, and call it dinner.
Blue Cheese, Fig and Arugula Mini-Pizzas
(adapted from Canadian Living)
3 Tbsp fig jam
12 mini whole grain pitas
1/2 cup crumbled Saint Agur, or other blue cheese
1 tsp chopped fresh thyme (optional)
1 cup arugula, chopped
1/2 tsp olive oil
1/2 tsp lemon juice
Spread fig jam on each pita; top with blue cheese and
thyme. Bake on a baking sheet in a 350
degree oven until the cheese is melted, 4 to 6 minutes. Transfer to serving platter.
Meanwhile, toss together arugula, oil and lemon juice. Arrange over pizzas.

Let's hope that if we're ever at the same party, there will be extra fig jam!
This looks delicious.
Best,
Bonnie
I still have a few jars of fig jam left from last summer…wish I could share with you. I usually make a batch right about this time of the year. These mini pizzas look so yummy…a must try! Have a great Sunday, Beth!
I am the silent sentinel of goat cheese & caramelized onion crostinis - we would fun together at parties.
These mini pizzas look scrumptious!! I'll look out for Saint Agur blue cheese - it must be quite spectacular to have such a name. :D
Now officially on my to-make list
How adorable. Figs are never given their proper due attention!
Figs and blue cheese is such a wonderful combo! I've never thought to use it to make pizza, though, mini or otherwise. Love the idea - really good stuff. Thanks.
these look amazing Beth make me drool:)

Yum! What a unique pizza. Figs aren't ever in season here and hard to find.
I'd be happy to call these dinner, too! So simple and wonderful...and now I have a new blue cheese to hunt down :)

My kind of combination too Beth, and you´d have to fight me for those figs at the book club...! Arugula on top of a pizza is one of my favorite things.
These sound fantastic! What a fabulous combination of flavors. You've got me craving mini-pizzas at 7 AM now! =)
I'm a sucker for fig jam also! Kind of want to turn this into a HUGE pizza!!
I tried my first fig a couple of weeks ago - never tried fig jam though. Sounds like an interesting pizza! :)

Beth that sounds so good! I absolutely love the combination. And I LOVE blue cheese.
This is a great flavor combination! I love the pairing of figs with blue cheese.
one of my all time favorites! i make a similar flatbread pizza, sometimes adding prosciutto and leeks. fig lovers are a distinct group to which I am happy to belong.
I am not a very adventurous cook (or eater) but I know where to come if I want to try something new.
What a unique combination... Will give it a shot for sure! Wonderfully done!
Delicious! I can't imagine you glaring at anyone ;) I'm also a lover of fig jam and Saint Agur blue cheese, in my humble opinion-it is just the best blue cheese! And arugula is such a favorite with me that I try to grow it in my garden year round! So, your creation of flavors in your mini-pizzas is perfection in a bite to me- and yes, I most likely wouldn't want to share either!
Beth, what a lovely combination of ingredients - blue cheese, arugula and figs sound awfully delicious together - great recipe, dear Beth!
Have a wonderful Friday and a great weekend!
Ha! Patty, you've never seen me at the book club table! I'm glad to hear I'm not the only Saint Agur fan - it's truly fantastic.
And thanks for your kind words, Andrea. Hope you have a great weekend too!
This is one of my favourite posts of yours my friend, this mini-pizza looks absolutely brilliant :D

I love fig jam with blue cheese! This a perfect mix of toppings.
There is something extra special about the combination of figs and blue cheese. The little mini pizzas look terrific!
I have made a regular sized fig and goat cheese pizza, but this idea of mini-fig and blue cheese with arugula! WOW! What a great idea for a party, Beth!
